Make Ahead Lemon Dill Rice Mix

Premade rice mixes can be a life saver on a busy night. I’m so glad I made these up for our busy season coming up (looking at you, deployment!). Definitely give these a try and switch up your seasonings too.

This recipe was inspired by Make-A-Mix Cookery cookbook, which was published in 1978. You can still find tons of copies on Amazon, and I highly recommend checking out the other recipes in this book.

Ingredients

  • 4 Cups rice

  • 5 tsp dried lemon zest

  • 4 tsp dill weed or dill seed

  • 2 tsp dried minced chives

  • 2 tsp salt

  • 8 tsp instant chicken bullion

  • Airtight container or mason jar lid

Recipe:

Mix all ingredients well in a large bowl. Place in an airtight container and store in a cool dry place for up to 6-8 months.

To cook rice, combine 1 and 1/2 cups rice and 2 cups of cold water and (opt) 1 tbs of butter in a sauce pan. Bring to boil over high heat. Once boiling, reduce heat and cook for 15 to 20 minutes (or adjust based on your rice packaging instructions).
