Rustic Venison Sausage Stew with Potatoes, Sweet Potatoes & Wild Rice

Ingredients:

  • 1 lb ground venison sausage (or substitute pork sausage)

  • 1 potato, cubed

  • 6–8 cups water (or broth)

  • 2 tbsp butter

  • 2 tbsp flour

  • ½ cup heavy cream

  • Salt, pepper, garlic powder, paprika, thyme

Instructions:

  1. Brown venison sausage in a Dutch oven until crisp. Season with salt, pepper, garlic powder, paprika, and thyme.

  2. Add chopped potatoes, sweet potato, carrots, and onion. Sauté until lightly browned.

  3. Stir in butter and flour to make a light roux.

  4. Add 6–8 cups water, bring to a boil. Stir in wild rice. (Cook separately if preferred for better texture.)

  5. Simmer until veggies and rice are tender. Stir in heavy cream before serving.

  6. Optional: top with parmesan.
