Leftover Lamb Roast Nachos
We’ve recently been making a lot of lamb roasts because at our Costco because they are somehow the same price or cheaper than beef now, which is crazy! I remember when lamb used to be a splurge for us, but I definitely foresee us buying it more and more.
We’ve been finding creative ways to use the leftovers, and lamb nachos are hands down one of our favorite ways.
The leftover lamb roast nachos come together in just a few minutes of preparation and only 10 minutes in the oven. This is a perfect quick, weeknight meal!
Ingredients:
1 or more pounds of leftover lamb roast
1 cup banana peppers
2 cups chihuahua cheese (or chedar or mozzorella)
1 Bag Tortilla Chips
1 Cup Feta Cheese
Mexican Table Cream
Directions:
Heat oven to 425 and place tortilla chips on a lined baking sheet. This will aide in cleanup later.
Add pulled apart or chopped lamb roast and peppers over chips and sprinkle chihuahua cheese overtop.
Place in oven for 10 minutes. Optional, for last 2 minutes turn on the broiler and crisp the cheese.
Remove from oven and add feta and table cream.
Eat and enjoy!

Can I use a different meat besides lamb?
Of course! These nachos would be great with any leftover meats. We love to use leftover pulled beef and anything that needs to be used up in the fridge before it goes bad.
Can I use a different cheese besides Chihuahua cheese?
Absolutely you can substitute the cheese in the lamb nachos. We like Chihuahua cheese because it melts so well and has a great neutral flavor, but we also use mozzerrella cheese and cheddar cheese when that’s all we have.
Can I add tzatziki sauce or other toppings to the lamb nachos?
We’ve surprisingly never tried this, but it’s on our list. I think this would be a great addition to the lamb nachos and add a great flavor!
