BUDGET Biscuit Breakfast Sandwiches
Just because you’re on a budget, does not mean you need to have a boring breakfast. Starting the morning off with a high protein breakfast is key to having a well balanced day.
🥪 Homemade Breakfast Sandwich Recipe
🍞 1. Buttermilk Biscuits (Makes ~6)
Ingredients:
2 cups all-purpose flour
1 tbsp baking powder
½ tsp baking soda
1 tsp salt
6 tbsp cold unsalted butter, cubed
¾ cup cold buttermilk (plus more if needed) *or milk with 1 TBS vinegar or lemon juice added
Instructions:
Preheat oven to 425°F (218°C).
In a bowl, whisk flour, baking powder, baking soda, and salt.
Cut in butter until crumbly (pea-sized pieces).
Stir in buttermilk until just combined—do not overmix.
Turn onto floured surface, pat into 1-inch thickness, fold dough over itself 2–3 times, then cut out 2.5–3 inch rounds.
Place on baking sheet close together for soft sides or spaced out for crisper sides.
Bake 12–15 minutes until golden.
🍖 2. Maple Breakfast Sausage Patties (Makes 6–8)
Ingredients:
1 lb ground pork (or turkey for leaner)
2 tbsp pure maple syrup
1 tsp salt
½ tsp black pepper
½ tsp dried sage
½ tsp smoked paprika
¼ tsp garlic powder
Pinch of red pepper flakes (optional)
Instructions:
In a bowl, mix all ingredients until well combined (don’t overwork).
Form into 6–8 patties.
Heat skillet over medium heat with a little oil. Cook patties ~3–4 minutes per side until browned and cooked through.
🍳 3. Egg Bake with Peppers & Onions (Makes enough for 9 sandwiches)
Ingredients:
12 large eggs
½ cup diced onion
½ cup diced red bell pepper
½ cup diced green bell pepper
Salt & pepper to taste
1 tbsp butter or oil
Instructions:
Preheat oven to 350°F (175°C).
In a bowl, whisk eggs with milk, salt, and pepper. Stir in vegetables.
Pour into greased 8x8-inch baking dish.
Bake 20–25 minutes until set. Cool slightly, then cut into squares.
🧀 Optional Add-ons
Cheddar, American, or pepper jack cheese slices
Hot sauce or aioli
Arugula or spinach for freshness
🧩 Assembly
Slice a biscuit in half.
Layer with:
1 sausage patty
1 square of egg bake
Cheese (if using)
Serve warm, or wrap individually in foil/parchment and freeze for later. Reheat in microwave or oven.
